牛腩

Beef brisket is one of the most versatile cuts we carry, equally at home in a Cantonese slow braise. Our frozen brisket range is small but genuine: a Brazilian diced brisket built for braising, and an Australian Wagyu brisket slice cut for the pot. Every pack is air or sea freighted from source and held in our own HACCP certified cold storage. Retail orders and wholesale accounts are both welcome.

Brazil Beef Brisket Diced 454g

Brazilian beef brisket diced, 454g. Portioned brisket cubes ready for braising, stewing or curry. Brazilian beef brings a clean flavour and honest fat distribution, which makes this a workhorse cut for restaurant kitchens and for home cooks running a weekly braise.

Aussie Kobe F1 Wagyu brisket fat hot pot slices, 200g. Part of our Chaoshan series, these slices come from Australian F1 Wagyu brisket fat. They suit Cantonese clear broth hot pot, Japanese shabu shabu and light braises where the fat does the flavouring.

Cut and Format Guide

If you want fattier slices for the pot beyond what brisket offers, the US beef short plate hot pot slices sit just below the brisket and carry a richer fat content. They are a short plate cut rather than brisket, but they pair naturally on the same hot pot table.

Why Brisket Suits Frozen Storage

Brisket is one of the few cuts that genuinely improves your kitchen workflow when kept frozen. The slow cooking it demands removes any pressure to use it the day you buy it. Cantonese brisket noodle braises, Korean galbi jjim and western smoke roasted brisket all reward planning rather than urgency, and a pack in the freezer makes that planning easy.

For the hot pot slices, freezing is part of the method itself. Meat slices cleanest when it is partially frozen, so the Wagyu brisket fat slices are cut and frozen at exactly the right thickness for even, quick cooking in the pot.

  • No time pressure. Braise this week or three months from now.
  • Cost per serving falls when you buy in bulk.
  • Consistent portioning and full origin traceability on every pack.
  • The same brisket supplied to Hong Kong commercial kitchens, available to you at retail.

Thaw the cubes fully overnight in the refrigerator. Pat them dry and sear on high heat before adding your braising liquid. Brisket needs two to three hours at a gentle simmer to turn fully tender. Soy based Cantonese braises, tomato and red wine western braises, and Korean doenjang braises all work well with the diced cut. Keep the simmer low and steady, and resist lifting the lid too often.

The Wagyu brisket fat slices need no thawing for the pot. Drop them straight into a simmering broth and lift them out within seconds, the moment the colour turns. A clear Chaoshan style broth lets the marbling carry the flavour without anything competing. For a full spread, build the table around a Canton hot pot bundle and set out your preferred dipping sauces.

Brisket Across Cantonese and Western Tables

Few cuts travel across cuisines as easily as brisket, which is part of why it stays on so many Hong Kong menus.

Cantonese braises and clay pot

In Cantonese cooking, diced brisket is the heart of the classic braised brisket noodle bowl, simmered slowly with rock sugar, soy and spices until it yields to a chopstick.

Chaoshan beef hot pot

In Chaoshan beef hot pot, brisket fat is prized as one of the firmer, springier cuts on the table. The Wagyu brisket fat slices in this range bring that springy bite together with Wagyu aroma, a pairing that suits a clear simmered broth where each slice is dipped for seconds and eaten at once.

Western smoking and pot roasts

In western kitchens, whole brisket is the cut behind slow smoked barbecue and pot roasts. While our focus is the diced and sliced formats most useful to Hong Kong cooks, the same logic applies across all of them: gentle heat, patience and time turn brisket into something tender and deeply flavoured.

Brisket comes from the lower chest of the cow. Many products labelled as brisket are actually short plate or flank, which sit nearby and carry more loose fat. Our range lists only true brisket: the Brazilian diced cubes and the Australian Wagyu brisket fat slices.

Choose the diced brisket for slow cooking, where the cubes hold their shape and soak up sauce over a long braise. Choose the Wagyu brisket fat slices for hot pot and fast cooking, where thin slices cook in seconds and the rich buttery Wagyu aroma carries the flavour.

Up to six months at minus 18 degrees Celsius in the original airtight packaging. Label each pack with the freeze date. The diced cubes hold well across the full window, while the Wagyu brisket fat slices are best used within four months for peak texture.

Yes. The Brazilian diced brisket is well suited to Cantonese slow braises, holding its shape through long cooking while soaking up the sauce.
