What Is Sirloin Steak?
Sirloin comes from the striploin, the muscle that runs along the cattle's lower back. Because this muscle does relatively little work, the meat stays tender while keeping more texture and chew than fillet. Its signature feature is the strip of fat running along one edge. Rendered properly in a hot pan, that fat bastes the meat and delivers the rich flavour sirloin is known for.
You may see the same cut labelled differently depending on origin. British and Commonwealth suppliers call it sirloin, while American suppliers usually label it striploin or New York strip. On our store, both names refer to the same cut.
Sirloin vs Ribeye: Which Should You Choose?
The two most popular steak cuts sit side by side in most shopping carts, but they eat very differently:
| Feature | Sirloin | Ribeye |
|---|---|---|
| Fat distribution | Concentrated in one edge strip | Marbled evenly through the meat |
| Texture | Firm, meaty bite | Soft and juicy |
| Flavour | Bold, beef forward | Rich and buttery |
| Best for | Those who want real beef flavour | Those who want melt in the mouth softness |
Neither is better. Ribeye rewards those chasing softness and richness, while sirloin rewards those who want their steak to taste unmistakably of beef. If you are cooking for a mixed table, sirloin is the safer crowd pleaser because it holds its structure across every level of doneness.
Our Sirloin Steak Range
Australian grain fed Wagyu brings intense marbling to a cut usually prized for flavour, giving you the best of both worlds. Our range runs from an accessible everyday Wagyu striploin to a bone in Jack's Creek sirloin at marble score 6 to 7, where the bone protects the meat during cooking and deepens the flavour. At the top sits the AUSSIE KOBE premium F1 Wagyu striploin, a marble score 6 to 7 steak sized for one generous serving and well suited to entertaining.
US Black Angus is the classic steakhouse choice, with even marbling and consistent quality. Choose the standard 250g cut for easy pan control, the twin pack for two servings, or the 500g thick cut if you prefer a deep crust with a blushing centre. Prefer something leaner? Grass fed sirloin from GREAT SOUTHERN in Australia and from New Zealand offers cleaner, more mineral flavour with less fat. For confident home cooks, our limited time chilled whole striploin, sold per kg, lets you portion your own steaks exactly as thick as you like.
Sirloin is not only for the frying pan. Our USA striploin hot pot slices and barbecue slices come ready cut, so they go from freezer to table with almost no prep. Thaw, swirl through the broth or lay on the grill, and serve.

How to Cook Sirloin Steak
Sirloin is one of the most forgiving cuts for home cooking. Five steps take it from freezer to plate:
- Thaw fully, then rest the steak at room temperature for 20 to 30 minutes before cooking so it heats evenly.
- Pat the surface completely dry with kitchen paper and season both sides generously with sea salt.
- Heat a pan until very hot with a little oil, then hold the steak fat edge down for about a minute to render and crisp the fat strip.
- Sear 2 to 3 minutes per side, depending on thickness, for medium rare.
- Rest for 5 minutes before slicing against the grain so the juices stay in the meat.
Quality You Can Trust, Direct From Source
Every sirloin steak we sell is imported direct from its origin and held in our own HACCP certified cold storage, with the cold chain maintained from arrival to your door.
FAQs About Sirloin Steak
In Hong Kong retail, yes. Sirloin is the British name and striploin (or New York strip) is the American name for the same cut from the lower back. Both appear across our range depending on the supplier's origin.
Move the steak from the freezer to the fridge the night before and let it thaw slowly. Pat it dry with kitchen paper before cooking, cook it the same evening or within a day, and never refreeze thawed meat, as this encourages bacterial growth and damages the texture.
Bone in sirloin cooks slightly slower, but the bone shields the meat and the flesh closest to it carries extra flavour. Boneless sirloin heats more evenly and is easier to portion. The meat itself is the same, so it comes down to flavour versus convenience.
Whole steaks are best pan seared, but thinly sliced sirloin is excellent in both settings. Our ready cut hot pot and barbecue slices save you the trouble of slicing partially frozen meat at home.
Grass fed sirloin is leaner with a cleaner, slightly mineral flavour, while grain fed develops more marbling, giving a softer, more buttery result. Neither is superior. Choose grass fed for a lighter meal and grain fed for richness.
