The carabinero is the crown jewel of the red prawn family. Our Spanish carabinero scarlet prawns are wild caught and graded for sashimi, arriving jumbo sized at around 5 to 7 prawns per kilo. Their deep scarlet shell and bold, briny sweetness make them a genuine showstopper, whether served raw, flash grilled or laid over fresh pasta. For slightly smaller portions that still deliver the same luxury, we also carry a carabinero pack of around 8 to 10 prawns per kilo.

How to Cook and Enjoy Red Prawns

Red prawns are prized for their flavour, so the golden rule is simple: do less. Overcooking masks their natural sweetness and firms up the tender flesh, so for sashimi grade prawns, raw or barely cooked is usually best.

  • Sashimi and crudo: peel, devein and serve raw with a squeeze of citrus and a little sea salt.
  • Flash grilled: cook them shell on over high heat for a minute or two per side, then squeeze the head juices over the flesh.
  • Pasta and rice: fold them in near the end of cooking for prawn pasta, paella or risotto.
  • Never waste the head: the rich paste inside makes a superb sauce or stock base.

Thaw your prawns slowly in the chilled section of your fridge, then pat them dry with kitchen paper before cooking. Cook within a day of thawing and avoid refreezing, which protects both taste and food safety.
